When it comes to Corn, there are two broad categories: sweet corn and milling corn. Sweet corn is the corn that most Americans are familiar with, it is picked fresh and eaten on the cob. Milling corn is allowed to dry in the fields and then has to be cooked. There are then two subcategories of milling corn: flint and dent. Flint corn is harder and is the corn traditionally used for polenta. Polenta is known as an Italian food but corn is a native plant to the Americas and was only introduced to Europe after 1492. Outside of polenta there are a multitude of uses for milling corn: hominy, nixtamalized hominy, masa, masa harina, cornmeal, and popcorn, just to name a few. The polenta included in this package that you will be cooking is an organic, open-pollinated, yellow dent corn called Wapsie Valley.
Available as whole grain polenta or whole grain corn flour or fine corn flour.
