Renan is a hard red winter wheat and this Renan is grown in New York State at Seneca Grain & Bean. Renan is a fantastic bread wheat developed in France. It is also a great example of how a wheat's protein number doesn't tell us the whole story of its abilities. Renan has a relatively low protein number, but the quality of its protein is high. Despite generalized concern about low protein in wheat, Renan makes beautiful, tall 100% whole grain loaves, that can be hydrated at 100% and above. Renan is also intensely flavored and slightly tannic which makes for a great loaf of bread. While Renan is a high quality bread wheat, BGM recommends using it sparingly in pastries.
