Buckwheat Ginger Cake with Pear & Quince Topping

This 9" cake is made with buckwheat, ginger, and sorghum molasses with a poached pear and quince top. The result is a very moist cake with lots of dark and spicy notes. Perfect for cold winter nights or a holiday dessert table centerpiece.
