Einkorn is the oldest cultivated cereal grain. Along with Emmer and Spelt, it is an ancient grain that has an outer hull that needs to be removed, which is unlike wheat. Einkorn is a lower yielding grain than wheat, which is also why it is more expensive than wheat. But, what it lacks in yields it makes up for in flavor and texture.

This Einkorn grown by farmer Stuart Farr at Hudson Valley Hops & Grains has a very buttery and sharp cheddar flavor to it. The texture of 100% Einkorn bread is like no other: it is soft and almost cake like. In addition to bread, Einkorn can be used in cakes, cookies, and pancakes.
